We have a huge respect for our surroundings and work closely with local farmers and suppliers, to keep the menu as full of local delights as possible. Dishes with Aviemore wild mallard, Alvie brown trout, Morayshire venison and black-faced lamb are just a few examples of how we like to keep things local. From an environmental stand point, it's important to us to keep our "food miles" down, but we also take great pleasure in supporting our neighboring producers and suppliers.
